Date and banana pancakes

Date and banana pancakes

There’s something about cooler weather which makes me want to make elaborate warm and cosy breakfasts. In summer I throw some cereal in a bowl or have some toast, or if I’m feeling really energetic, will make a fruit smoothie but Autumn just makes me want to cook pancakes or French toast or bacon and eggs and stay in[read more…]

Strawberry, chocolate and peanut butter smoothie

Strawberry, chocolate and peanut butter smoothie

I received this in the mail the other day and couldn’t wait to try something out of it.  I felt it was time for a healthy breakfast after the sugar fueled, indulgent days I’d been having and let me tell you, everything in this is good for you and, like Sophie says, has a very milkshake appeal about it.[read more…]

Spicy vegan Mexican wraps with quinoa

Spicy vegan Mexican wraps with quinoa

We had a bit of a Mexican theme tonight.  I love this cuisine – there’s something so cheerful and fun about Mexican restaurants, I find it very difficult to be depressed if we ever go out for Mexican.  I guess it’s a bit cheesy (do you see what I did there?!) but sometimes you just need that.[read more…]

Healthy egg salad sandwich

Healthy egg salad sandwich

I, like a lot of people, used to make egg sandwiches with mayonnaise.  Nothing wrong with that!  Eggs are healthy, full of energy-giving nutrition and protein and it’s a handy lunch to take to work. Still, if you’re trying to eat food as close to nature as possible, this recipe from Limes and Lycopene is the way to[read more…]

Quinoa, lentil and bean salad with summer vegetables

Quinoa, lentil and bean salad with summer vegetables

I made a south west style salad tonight from blogger Jacqueline at tinned tomatoes.  I added corn kernels because I had some fresh ones I’d frozen previously which I wanted to use, I also only had the French puy lentils, and tweaked the amounts a bit to suit 3 people.  This is Jacqueline’s own recipe and I’m really pleased I[read more…]

Mexican chilli beans

Mexican chilli beans

This versatile, spicy, rich and healthy dish is great for weekday nights in a number of ways; with brown rice, sour cream and avocado in wraps with quinoa, melted cheese or avocado as a topping for baked potatoes with sour cream or Greek yoghurt in taco shells with grated cheese mixed with chutney and grated cheese[read more…]

Leafy salad with avocado and toasted walnuts

Leafy salad with avocado and toasted walnuts

I know, I know.  Big deal, lettuce, avocado and dressing.  But do you know what?  This is what I felt like for lunch today – a simple salad made with fresh organic ingredients and a classic home made French dressing.  Plus I wanted to share so you could all see how healthy I’m being (I[read more…]

Classic banana bread

Classic banana bread

So here’s a lovely, classic banana bread with that moist, soft texture and banana flavour we all love (I know I haven’t exactly invented the wheel what with posting approximately the 30 millionth version of banana bread but everyone thinks their own is the best). Also, why must the surface of my loaf cakes crack?  Every.time.

Affogato – “drowned” ice cream

Affogato – “drowned” ice cream

I love this dessert because it’s just so decadent.  I also love that it has a routine to it; pouring in the espresso, dipping the biscuits.  I love the moment you pour the hot espresso on the ice cream and it starts to melt; the first spoonful of ice cream so sweet and creamy and[read more…]

Almond and macadamia biscotti

Almond and macadamia biscotti

What little delights these are.  Crunchy and sweet, perfect for having with espresso – which has given me a genius idea so stay tuned for a lovely dessert soon. I didn’t have enough almonds so I used some macadamia nuts to make up the difference and they were perfect so I would probably do this again.

Strawberry buttermilk muffins

Strawberry buttermilk muffins

I had an epiphany late in bed the other night.  Yeah I know, I’m daft (or I was hungry), but it suddenly came to me how delicious strawberry buttermilk muffins would be.   Strawberries aren’t a fruit you commonly hear about in terms of baking, at least not as much as blueberries, raspberries or cherries, and I don’t know[read more…]

Chilli Con Carne

Chilli Con Carne

I love chilli con carne.  I generally make vegetarian chilli, as it’s healthier and I usually prefer it, however this recipe, which I found a few years back on BBC Food, is wonderful.  It’s rich, spicy and comforting, with ingredients you mostly have knocking around.  It’s fantastic on a cold or rainy night, with a couple of[read more…]

Raspberry, lemon and yoghurt loaf

Raspberry, lemon and yoghurt loaf

Oh, my god.  This loaf is just gorgeous.  Juicy raspberries in a fluffy loaf with a hint of lemon.  So good with butter and a cup of coffee.  Anyway.  I’m digressing. I recommend using a good brand of yoghurt; I used an organic European style honey flavoured yoghurt (think Greek yoghurt with a slight hint of honey) but[read more…]

Raspberry friands

Raspberry friands

I purchased a friand tin on impulse the other day so of course I had to give it a test run.  I’ve never baked friands before, although I’ve had them quite often in cafes with a coffee. I loved the soft texture inside these easy-to-make little cakes, with crisp edges and a burst of berries. So if you[read more…]

Marinara sauce

Marinara sauce

I know everyone has their own way of making pasta sauce, and there’s no wrong or right way but I thought I’d post my own recipe, which I make regularly and freeze. I mean, there’s nothing wrong with tomato sauce in a jar, and god knows I use it when I’m whipping up a quick lasagne,[read more…]
