Mini zucchini & bacon quiches

Mini zucchini & bacon quiches

These are brilliant and so easy to make – I just made a bunch for new year’s to have with drinks.  You could easily add different flavours to your liking (chilli & sweetcorn, feta and roast pumpkin, just for example). You can store them in the fridge for a few days for lunches too.

Roast pumpkin, walnut & feta quiche

Roast pumpkin, walnut & feta quiche

I suddenly felt like roast vegie quiche the other day after seeing a frozen one at the supermarket, and decided to do some roasting.  There’s a bit of faffing about with quiche, making the pastry, cooking vegies, etc but it’s worth it as long as you use a big enough tin.  I can’t say this[read more…]

Nectarine raspberry crumble pie

Nectarine raspberry crumble pie

I really don’t make enough pies.  So I decided to whip up a rustic pie with some luscious summer fruit.  Initially, I was going to use yellow peaches but they sent me nectarines instead in my shopping so I tried those.  This lovely pie is packed full of fruit, as it should be in summer!  And[read more…]

Cherry tomato, cream cheese & basil tart

Cherry tomato, cream cheese & basil tart

The flavours of summer right here in this gorgeously cheesy, tomato & basil tart.  I whipped up a quick, fragrant and rustic pesto to have with this and it was perfect for a light lunch.

Raspberry rhubarb galette

Raspberry rhubarb galette

Galettes are a super easy, delicious way to make pie, basically.  A few years back I made a cherry and peach galette which turned out to be one of my favourites desserts. However.  Ahem.  This is what happens when you use too many raspberries.  I had 400g of raspberries left over in the freezer and thought I’d just throw them[read more…]

Strawberry apple pie

Strawberry apple pie

Gah!  My pies always turn out super messy which disappoints me quite a bit.  Some things I would change with my current baking efforts – use fresh strawberries instead of frozen and a bit more flour (which I’ve changed in the recipe to reflect this) or you could try this advice or even …. forego the pastry base[read more…]

Double chocolate cream tart (no bake)

Double chocolate cream tart (no bake)

This rich, creamy, no-bake tart was gorgeous on our very hot Christmas day however you do only need a small slice (I’m really not being judgmental; you’ll think you want a big slice because it’s so sweetly creamy and comfortingly childlike yet darkly chocolate, get halfway through it, feel full yet keep scarfing it down then[read more…]

Peach and cherry galette

Peach and cherry galette

This lovely seasonal galette was made with December peaches and cherries baked on a rainy afternoon just before Christmas Day (I’m uncomfortably aware it’s way way too late in the year to still be talking about Christmas but completely forgot I hadn’t posted this yet and am madly going through summer recipes before we aren’t in it anymore).  I mean[read more…]
