Teriyaki broccoli with soba noodles & cashew nuts (vegan)

Teriyaki broccoli with soba noodles & cashew nuts (vegan)

I’m really into home-made teriyaki sauce lately, particularly since it’s easy to whip up and so incredibly sweet, salty and spicy.  It’s also delicious in this simple dish with broccoli and noodles which rivals any take-away you could order and involves only a few ingredients. This is brilliant for a quick and flavoursome lunch, plus I sort of needed something[read more…]

Pizza Margherita (and a great pizza base recipe)

Pizza Margherita (and a great pizza base recipe)

If I’m honest, my favourite pizza lately is really simple; home made tomato sauce with basil and mozzarella.  A few kalamata olives scattered over add a welcome touch of saltiness. I’ve made pizza bases before although it’s not a regular thing; I’ve finally come up with a recipe I’m really happy with though – chewy and[read more…]

Mushroom stroganoff with sour cream herb mash

Mushroom stroganoff with sour cream herb mash

I’ve always thought that stroganoff didn’t really need the beef (it’s all about the mushies and sauce after all) so wondered what this classic dish would taste like with just hearty brown mushrooms.  Well we had this one weekend recently and it was delicious!  Mushrooms are a sort of beefy vegetable anyway, and so long as[read more…]

Roast breakfast peaches

Roast breakfast peaches

The fragrance of these roast peaches throughout the house while baking! Vanilla scented, sweet and caramelised – a lovely (and health conscious) breakfast, even if you do have to turn on the oven on a sunny morning. Totally worth it and their warm sweetness went so well with some cool Greek yoghurt.

Smoked salmon & spinach salad

Smoked salmon & spinach salad

This is a lovely, fresh and healthy salad I made recently.  Now just to warn, it’s quite onion .. y so if you’re not into raw onion I would (Obv), leave out the red onion.  The paper thin slices of vegetables aren’t mandatory but texture wise and as far as flavour goes, they do make this salad[read more…]

Black sticky rice antioxidant breakfast bowl

Black sticky rice antioxidant breakfast bowl

Remember the black sticky rice pudding I made a while back?  Well lately, due to hot mornings and such, I’ve been cooking black glutinous rice and storing it in the fridge it for breakfasts for the next day or two and serving it with syrup, Greek yoghurt and berries.  It’s a really convenient breakfast if you make the rice[read more…]

Spaghetti alla puttanesca

Spaghetti alla puttanesca

This classic Italian recipe, which I changed a bit by using cherry tomatoes, is amazingly flavourful.  The trifecta (so unpopular when I was a kid but now I love them) of olives, capers and anchovies make for a delicious dish without being overpowering at all.  I really enjoyed this!

Oven baked crispy spicy onion rings with lime chilli yoghurt dip

Oven baked crispy spicy onion rings with lime chilli yoghurt dip

Sometimes I prefer fried onion rings to chips, sacrilege I know!  I’ve never made them though because the take-away ones are pretty good.  With our milk delivery the other day though, we received the quarterly magazine which had a recipe for onion rings in it so I spontaneously thought I’d give it a go and they were surprisingly easy,[read more…]

Spring spaghetti with zucchini, cherry tomatoes & peas

Spring spaghetti with zucchini, cherry tomatoes & peas

I’m always banging on about spring produce but this time of year always inspires me to cook up huge, steaming bowls of pasta with this season’s fresh and lovely vegies.  There’s something about their sweet, crisp flavour combined with comforting spaghetti;  fresh, lemony and perfect for a weekend lunch.

Spicy maple pecan roast sweet potatoes

Spicy maple pecan roast sweet potatoes

I’m not quite ready to give up sweet potato even though it’s already hot here and turning the oven on is a bit of an effort. This is a side dish but to be honest, I had a bowl of these for lunch on their own; sweet, caramelised, spicy and with a gorgeous, fragrant crunch[read more…]

Home made vanilla brown sugar body scrub

Home made vanilla brown sugar body scrub

Years and years ago, I ordered some vanilla brown sugar body scrub from an online fancy cosmetic store for about $40.  Clearly I had more money than sense at the time …. when I used it (and it was lovely) I noted it only had a few ingredients in it and thought how easy it would[read more…]

Pasta with creamy pumpkin sauce (vegan)

Pasta with creamy pumpkin sauce (vegan)

While making my usual winter pumpkin soup recently, it occurred to me that with a few tweaks, it would make a lovely, healthy sauce for pasta, so I gave it a go. Adding nutmeg, sage and a decent amount of full fat coconut cream, this turned pumpkin soup into a lush, creamy and flavoursome sauce which goes[read more…]

Savoury & spicy pumpkin loaf (vegan)

Savoury & spicy pumpkin loaf (vegan)

I often make sweet baked loaves, in fact, they’re a staple in our freezer for morning teas and things. But the other day I thought about making a savoury loaf, a type of quick bread, something spicy and warm to have on cold mornings with butter or with a bowl of steamy hot soup.  So because[read more…]

Broccoli with chilli, garlic, lemon & toasted walnuts

Broccoli with chilli, garlic, lemon & toasted walnuts

I mean I like broccoli; green, crunchy, good for you but it’s not exactly the most exciting food on the planet to prepare or eat, so finding a way to dress up ye olde steamed broccoli is always good.  The classic flavours of chilli, garlic and lemon go brilliantly with this rustic vegie and I’m[read more…]

Vegan breakfast bars

Vegan breakfast bars

I’ve heard a lot of negative remarks about the humble little muesli bar lately … too much sugar!  Additives!  You may as well drink a can of coke!  etc etc.  Poor muesli bars, being a child of the 80s I’ve always liked them and if you buy a brand which is quite healthy and lower[read more…]

Brown rice bowl with tuna, avocado & fried egg

Brown rice bowl with tuna, avocado & fried egg

Phew, I needed something to reset my body after a couple of days of eating basically empty (yet delicious) carbs.  This very tasty, healthy rice bowl full of protein and good fat was just the thing!  Nutty brown and wild rice, creamy avocado and fried egg, savoury tuna and some salty Tamari to top it off (and a little[read more…]

Swedish meatballs

Swedish meatballs

I don’t know how Swedish these actually are so if anybody from Sweden is reading, apologies!  They are, though, creamy and flavourful and pretty easy to make however I will say, you need to use a non-stick pan to sauté meatballs (I always forget and they stick like crazy).  You could use any type of[read more…]

St Patrick’s Day – the green smoothie

St Patrick’s Day – the green smoothie

I had grand ideas of making a chocolate Guinness cake for St Patrick’s Day but ran out of time.  Instead, I thought I’d go off the beaten track and offer this green smoothie I made recently which is such a lovely green colour, it seemed serendipitous, despite being devoid of butter, cream, potatoes or Guinness I’ve[read more…]

Walnut, parsley & lemon penne

Walnut, parsley & lemon penne

I made this lovely fresh pasta dish on a recent weekend.  It only requires a few ingredients which most people would have on hand and the flavours pack a punch; lemony, fragrant garlic, fresh herbs, crunchy walnuts, salty parmesan and a bit of heat.

Blackberry lime muffins (vegan)

Blackberry lime muffins (vegan)

I make muffins quite often to freeze for morning teas and such, so thought I’d use some blackberries I had in the freezer and a few limes left over from gin and tonics on a recent weekend to bake some summer inspired, vegan little cakes. There really isn’t any difference between these and muffins using eggs and dairy; they[read more…]

Fig, apple and watercress salad for one

Fig, apple and watercress salad for one

I’ve always said I love salads with fruit in them, not actual fruit salads so much, they remind me of school, but salads with slightly bitter greens and luscious, sweet fruit. So it’s fig season here in Australia and as I always do, I ran out and picked up a whole heap of juicy, plump figs. [read more…]

Miso vegetable soup with ginger and chilli

Miso vegetable soup with ginger and chilli

I’ve always loved the salty flavour and lightness of miso soup, in fact, Japanese food in general is a cuisine I really enjoy for the taste and health benefits.  When I was younger, at uni and a bit broke, I’d just have miso soup on it’s own, sort of like a really healthy cup-a-soup, but over[read more…]

Quinoa, cherry tomato, tuna and feta salad

Quinoa, cherry tomato, tuna and feta salad

It’s that time of year when I start getting into clean and healthy salads.  This pretty salad might look light but is really substantial with a decent amount of protein and is packed with grainy quinoa, fresh, sweet tomatoes, crisp spicy radish, smoky tuna and salty feta.  I also added a creamy lemon dressing which topped off an[read more…]

Atlantic salmon with summer mango salsa

Atlantic salmon with summer mango salsa

Although I love fruit (not a fan of the no sugar/fruit trend currently), I’m not overly keen on fruit with savoury meals although certain fruit works really well; apricots, figs and currants in Moroccan cooking, for example and our lovely Queensland mangoes which go perfectly tossed through salsa.  So for a lovely warm weather meal today, I[read more…]

French inspired ham baguette

French inspired ham baguette

One of my favourite things to eat on the weekend is a sandwich or roll made with fresh, seasonal ingredients (and is there anything much better than fresh bread?).  So we usually go down to the grocery store and bakery and pick up some nice stuff, come home and put it together.  Of course, this often means we[read more…]

Spring pea and potato salad

Spring pea and potato salad

It’s funny how I hate frozen peas but love fresh ones.  Shelling peas always reminds me of being a kid and I’d eat more peas than would go in the bowl for mum.  Sweet, crisp and light, they were perfect in this spring inspired salad with spicy radish, creamy potato, rich buttery leeks and a creamy, zingy,[read more…]

Crunchy vegetable pasta salad

Crunchy vegetable pasta salad

In warmer weather I love to make salads for meals and as I’m a bit of a pasta fan, I whipped up a pasta salad the other day with only a few simple, on-hand ingredients and it was really satisfying in that healthy, yet hearty pasta way;  I loved the crunch of the raw vegies and walnuts[read more…]

Spicy sweet potato cakes with herb and lemon tzatziki

Spicy sweet potato cakes with herb and lemon tzatziki

I always feel kind of old fashioned thrifty when I use up leftover things as I did a while back with this dish, especially when they make up delicious, fried potato cakey things .. and despite the crispy appearance of these spicy little patties served with a garlicky, creamy sauce, they’re super healthy.  My sweet potato mash is also[read more…]
