My new obsession for breakfast: avocado and egg on toast
I’ve been eating this a lot lately for breakfast/brunch – you could say I’m obsessed! I can’t imagine why I haven’t been eating this my whole life and just had to share in case I wasn’t the only one under a rock all this time.
Basically it’s creamy, perfectly ripe avocado sprinkled with sea salt and black pepper, a soft fried (or boiled, poached, whatever – must be soft and gooey though) egg on top of buttered heavy wholegrain or sourdough toast, some diced spring onion, maybe some shaved Parmesan if you have it and a good coffee. And I’m not an espresso coffee snob or anything, I often have Columbian freeze dried instant from the lovely folks at Tribes & Nations, or stove pot coffee, but it must be smooth tasting, hot and strong.

My little sis is due to give birth in November. She is always craving for avocado. Quite okay because avocados are healthy. The problem is, I ran out of avocado recipes. Now, this is something she’ll truly enjoy. Thanks for the post!

I’ve eaten toast with butter, or egg, or avocado — but never thought of combining the three with spring onions. I can’t wait to try this!

I made this today for breakfast with a few tweaks. Instead of butter, I ran a peeled garlic clove over my sour dough toast (no oil or anything), then topped the egg with leftovers from last night’s tacos – homemade tomatillo salsa, cilantro, chopped red onions and a dash of chipotle sauce. I think I may eat this everyday for the rest of my life!
