Cherry clafoutis

We were very French today and had cherry clafoutis and coffee for breakfast.

This lovely dessert (or breakfast) is similar to a pancake but baked in the oven.  The velvety soft and creamy texture pairs well with sweet little bites of cherries.

Recipe:

300g pitted cherries
2 large eggs
1/4 cup raw caster sugar
1/2 cup self raising flour
1 cup full cream milk
1/4 cup single cream
1 tspn orange zest
1 tspn vanilla bean paste

Preheat oven to 200C.  Place cherries in a greased shallow heatproof dish (I used a ceramic pie/flan dish).

Whisk eggs in a medium sized bowl.  Combine sugar and sifted flour and add to eggs, stirring gently until smooth.  Gradually whisk or stir in milk, cream, orange zest and vanilla until all combined.

Pour mixture over berries and bake for 20-25 minutes until top is browned and has risen slightly.  Sift icing sugar over the top and serve with cream, Greek yoghurt or vanilla ice cream.

  1. Emma-Your cherry cloufutis (hope I spelled it right) is so incredibly pretty, amazingly inviting and so darn light and delicious, I can hardly wait when the cherries are in full season here.

  2. Ive never had a clafoutis but my goodness Emma, this is sure making me wish i could change that fact asap! It really looks absolutely perfect…lovely 🙂
